How to cook Thai rice

Many of you ever wonder how to cook Thai rice? Rice is the main dish of Thai cuisine. Nowaday there are many rice cooker selling in the market, still many don't know how to cook. (I've found a lot of queries asking about that on the net.) Here are two videos from Youtube.com telling you how to cook Thai rice, both by using rice cooker and without rice cooker.

Thai style rice can be classified into 2 categories based on the time of sell after the harvesting. One is the new rice or "Kao Mai" which is the rice that just be harvested and sell, so the grain hold a lot of water in it. When you cook with new rice, the cooked rice will be a little damp. New rice have soft smell of earth and the color is clear white.

The other one is old rice or "Kao Kao". It is the rice that has been sell after a time of harvesting, may be a year. Since the grain was stored for some time, the water in it is less that new rice. When you cook, the cooked rice will be less damp than the new one. Old rice has less aroma and is white-yellow in color. To cook any fried rice, you should used old rice instead on the new one.

In the old time when there is no electicity, traditional Thai style rice cooking used clay pot which give rice earthly aroma. Sometime Thais put some flowers or some leaf that has sweet smell like jasmine or pandan leaves in the cooker after the rice is cooked and close the lid, let the heat of the cooking drive out the aroma. The rice will appetizingly smell good. 

We also cook Thai rice with coconut milk instead of water and eat with papaya salad Thai style. This dishes called "Kao Mun Som Tam". I wil post this recipe later.

Lastly, I've read a lot of question on the net if cooked rice can be frozen. The answer is yes but you have to put the rice in a close utensil or wrap it to prevent any freeze from making the rice too dry. If you want to reheat the rice to eat it, just put a little bowl filled with water on top of the rice to make it clammy and microwave it.

Since you know how to cook Thai rice, and if you are a Thai food lover, you should buy a rice cooker. I suggest you buy a good one because you have to use it a lot. The size is depend on you. If you are single, a 1.5 cup rice cooker or a 3 cup rice cooker should satified your need. However, if you have your family, a bigger one should be better. Below I add some links from amazon.com. The 1.5 rice cooker is Panasonic SR-3NA which can cook 1-1/2 cup, suit for any single. Most Review on the net give this 1.5 cooker 4 stars out of 5. 

A couple without kids may love a 3 cup rice cooker. There are a lot of supplier for this size in the market and the price range is so high. If you need a plain one you could pick the Zojirushi NHS-06. A cutomer at shopzilla.com review the pros and cons of this Zojirushi NHS-06 as easy to cook and clean, but the price is not least expensive. Some says it does everything that you can expect for little money. Well, it's up to you! Another Zojirushi is the Zojirushi NS-LAC05 which has a higher price but also has micro-computerized fuzzy logic technology. The price at the time I type this post is only $134.57, 24% discout from $177.99 with free shipping.

If you have 1-2 kids, you might like the Zojirushi NS-TGC10 Micom. Tom Kha Kai (Spicy chicken curry in coconut milk soup)

Tom Kha Kai (Spicy chicken curry in coconut milk soup) is really famous Thai dish and is one of the great food to cook. Tasty and not so spicy are the keys for success of this dish around the world. Here you will learn how to cook Tom Kha Kai. It's really easy! However, if you don't have much time to cook this awesome dish, you can use ready-to-cook "Tom Kha" soup from Lobo or Roi Thai which are convenient and easy to use. For Lobo, which is a top hit brand of Thais living abroad, you just add vegetable, coconut milk and chicken meat. For Roi Thai, just vegetable and chicken. Easy, eh?

200 g. Chicken, sliced
3 cups Coconut milk
100 g. Galangal, sliced
1 tbs. Sugar
3 tbs. Fish sauce
3 Kaffir lime leaves
3 tbs. Lime juice
½ cup Lemongrass, sliced
1 tbs. Chili sauce
5 Bird’s eye chili, crushed

1. Boil coconut milk in the pot.
2. Add sliced galangal. Lower the temperature and cook for 3-5 minutes.
3. Add sliced chicken and cook until the chicken is done.
4. Add sugar, lime juice, fish sauce, chili sauce, sliced lemongrass, kaffir lime leaves, and crushed bird’s eye chili.

The real Thai taste of this wonderful dish should be a little bit sour of lime taste and sweet with the coconut milk. Some may add mushroom into the soup. Since dishes made with coconut milk as an ingredient are greasy when left cold, you should serve your terrrific dish with rice while it is still hot.  

This great food to cook cannot miss coconut milk. When I was a child, my family made fresh coconut milk from coconut fruit, but it is a hard work and take a lot of time (believe me!). Now there are many instant coconut milk cans. In Thailand we usually use "Chao Koh" brand and from my personal experience is the best. I have put this 2 links about Chao Koh below for your convenience. Both are 13.5 Oz. but one of them comes in 8 packs.

Tom Kha Kai needs kaffir leaves and lemongrass. You can buy them from amazon.com. Kaffir leaf sells in both fresh leaves and powder form. I have never use powder kaffir leaves, but jugding from the review it might be okay. Lemongrass is another herb. You can search and buy all of the herbs by using the search box on the right. However, if you love cooking Thai food and you have some space, you should grow them yourself because a lot of Thai recipes use them as ingredients (Thai lemongrass is realllyyyy easy to grow!) plus they make your garden more beautiful. Kill two birds with one stone!

Thai seafood sauce -Thai dipping sauce

This is the common Thai dipping sauce which is spicy with the flavor of garlic and chili. Thai cuisine use this sauce in many steamed or grilled seafood dishes. Lately I've found some cook shop using this sauce as a dipping for roasted chicken, and it tastes really good.

2 tbs. Chopped garlic
1 tbs. Chopped bird view chili
4 tbs. Fish sauce
4 tbs. Lime juice
1 tbs. Sugar

Just mixed them all in the blender and blend them for 1-2 minutes. This Thai dipping sauce is easy, right? I have another seafood sauce recipe from my friend using some interresting ingredient like pineapple that I will post it later. (A lot of my friends try that recipe and they all say it's really tasty!)

Fish sauce with bird’s eye chili (Nam Pla Prig)


If you have a chance travel to Thailand and visit Thai restaurant or any a la carte food shop, you should see a little cup or a little glass bow filled with brown liquid and chopped chili on the table. It is one of the most common sauces in Thai food. We call it “Narmpla-prig” or “Prig-narmpla” and use it to flavor any a la carte dish. It is too easy that I hesitate to put it on the blog, but since it is so common in Thai meal I’ll tell you this Thai sauce recipe and how to prepare it (I dare not say “cook”).

Fish sauce with bird's eye chili
2-3 tbs. Fish sauce                              
4-5 Bird’s eye chili (the amount of chili vary with how spicy the sauce you prefer)      
A little bit of sugar (additional ingredient)

Just chop the chili and mix in fish sauce (and sugar if you prefer). That’s it! Well, too easy right? So I tell you some additional choices. Some Thais add a little bit of lime juice in the sauce. Some may add chopped shallots and/or chopped garlic. You can also make fish sauce with Thai paprika and crushed dried shrimp. Also, some Thais put unripe fruit like mango or ripped fruit that have sour taste. 

There're a lot of fish sauce selling in amazon.com, but in Thailand the most famous brand are Tiparos and Squid. You can buy them from amazon.com via the links below.

White prawn baked with glass noodles in casserole (Kung Ob Woonsen)


The first one of glass noodles recipes. This one is my girlfriend’s favorite. She usually cooked this dish because it’s easy (Another reason is that she really love glass noodle!), so she taught me how to cook. Now it’s also one of my favorite. You can use casserole or just a pot for baking.

3-4 White prawn 300-400 g.         
100 g. Glass noodles                                                         
2 Bacon                                    
4-5 Slice ginger                                  
2 cloves Garlic, crushed                        
2/3 cup Chicken stock                        
2 tbs. Oyster sauce                             
2 tbs. Soy sauce                                
1 ts. Sugar                                        
1 tbs. Pepper                                     
Celery for topping

Lay bacon down in the casserole. Put pepper, crushed garlic, slice ginger over the bacon

Boil glass noodles till it’s cooked then bring it out of the boiling water. Put white prawn over the bacon and spicy, then lay down the glass noodles over the prawn.

Mix oyster sauce with soy sauce and sugar. Pour the mixed sauce into the casserole. Close the casserole lid and put the casserole  on the oven or in the stove for about 5 minutes. Open the lid and stir the ingredient then bake it for another 1-2 minutes.

You can eat this dish with most common Thai sauce-chili and fish sauce (I will tell you how to make it later), Thai seafood sauce or Worcester sauce. It’s really easy.

You can buy most of the ingredients from Amazon.com below this post. For glass noodle I usually use Kaset Brand and I'm glad that amazon has it. About sauces, Oyster and soy sauce, I prefer Healthy Boy Brand and Maekrua Brand. You can either used light soy sauce or soy sauce with mushroom.

Fried squid with garlic and peppercorns

I seldom have squid as a dish because my home town is far from the sea. However this is fried seafood recipe, an easy spicy meal that is excellent to be eating with rice. In this recipe you can see that we use sugar. Most of the time adding sugar during the cooking is not purposed for the sweet flavor of sugar but to smooth the flavor of the food.

2-3 Squid
5 cloves Crushed garlic           
4 tbs. Oil                            
2-3 Crushed peppercorn
2 tbs. Oyster sauce 
½ ts. Sugar  
½ cup Sweet basil leaves      
Peppercorn for topping

Cut the squid into rectangular shape or ring shape. Crush 3 of garlic cloves , marinate with the squid and 1 tbs. of oil for 30 minutes. Pour the oil into the wok or pan then fry the garlic that left for 10-20 seconds. Put the squid into the pan and fried for 1 minute then add crushed peppercorn and fried for 2 minutes. Add the oyster sauce and sugar then fried until the squid is cooked. Topping with sweet basil leaves and peppercorn.

Rice soup with ground pork (Kao Tom Moo Sub)

An easy meal that is good for breakfast or supper. I usually cook this pork and rice recipe when I am hungry and need a quick, easy meal. You can change ground pork to others kind of meat ie. sliced chicken, fish, or squid.

1 cups Rice
¾ cup Ground pork
3 cups Pork stock
1 tbs. Vegetable oil
Garlic, dry cabbage leaves, fish sauce, pounded pepper, chopped celery, chopped spring onion, chopped Chinese parsley

  1. Boil rice with 2 cups of chicken stock till it’s cooked. Pour another cup of stock. Bring the rice out of the oven.
  2. Crush garlic and fried with vegetable oil for 10-20 sec. Bring the garlic out but leave the oil in the wok.
  3. Put ground pork (or any meat you like) in and fry till the meat is cooked.
  4. Mix the cooked pork with rice soup.
  5. Sprinkle on top with chopped celery, chopped spring onion, chopped Chinese parsley, and fried garlic. You can flavor you own soup by adding fish sauce or chili marinated in vinegar.
