Thai calamari recipe -Spicy calamari salad

Thai calamari salad or Yum-Pla-Mueak is really easy to cook. Thais usually eat this dish as a food with alcohol drinks. You can cook this dish as a meal eating with rice.

1 Squid (about 300-400 g.), sliced
3 Shallot, sliced
¼ cup Onion, sliced
¼ cup Celery, sliced
1 tbs. Bird eye’s chilli, thoroughly chopped
1 ½ Sriracha sauce
3 ½ tbs. Lime juice or lemon juice.
1 tbs. Fish sauce
1 ts. Sugar

  1. Boil the sliced squid about 1 minute. Take out.
  2. Mix sugar, Sriracha sauce, lime juice, fish sauce. Stir until sugar diluted. Add bird eye’s chilli.
  3. Mix the dressing with squid. Add celery, shallot and onion. Stir.
  4. Serve.

Cooking with fish sauce – Shrimp in fish sauce

Cooking with fish sauce is a really common in Thai cuisine. This shrimp in fish sauce (Koong Chae Nam Pla) is one of the easiest Thai dishes. It’s really spicy, make it a very good savory eaten with alcohol drinks.

500 g. Shrimps
¼ cup Fish sauce

Ingredients for sauce
50 Birds eye chili
10 cloves Garlic
1 tbs. Coriander, thoroughly sliced
3 tbs. Fish sauce
3 ts. Sugar
¼ ts. Salt
4 tbs. Lime juice
¼ cup Mint for topping

  1. Put the shrimps on a plate. Pour ¼ cup of fish sauce over the shrimps and keep them in a refrigerator for about 1-3 hours.
  2. Making sauce by blending birds eye chili, garlic, and coriander. Flavor with fish sauce, lime juice, sugar, and salt. Stir until the sugar is diluted.
  3. Top the shrimp with sauce. Serve.

Easy, right? As I said before, this dish is a good food eaten with drinks. Thai people usually have many foods eaten with alcohol beverages like many Asian cuisines. Most of the dishes are hot, sour,  and spicy, so you have to drink to soften the hot and spiciness, make it more fun in drinking with friends.

White prawn baked with glass noodles in casserole (Kung Ob Woonsen)


The first one of glass noodles recipes. This one is my girlfriend’s favorite. She usually cooked this dish because it’s easy (Another reason is that she really love glass noodle!), so she taught me how to cook. Now it’s also one of my favorite. You can use casserole or just a pot for baking.

3-4 White prawn 300-400 g.         
100 g. Glass noodles                                                         
2 Bacon                                    
4-5 Slice ginger                                  
2 cloves Garlic, crushed                        
2/3 cup Chicken stock                        
2 tbs. Oyster sauce                             
2 tbs. Soy sauce                                
1 ts. Sugar                                        
1 tbs. Pepper                                     
Celery for topping

Lay bacon down in the casserole. Put pepper, crushed garlic, slice ginger over the bacon

Boil glass noodles till it’s cooked then bring it out of the boiling water. Put white prawn over the bacon and spicy, then lay down the glass noodles over the prawn.

Mix oyster sauce with soy sauce and sugar. Pour the mixed sauce into the casserole. Close the casserole lid and put the casserole  on the oven or in the stove for about 5 minutes. Open the lid and stir the ingredient then bake it for another 1-2 minutes.

You can eat this dish with most common Thai sauce-chili and fish sauce (I will tell you how to make it later), Thai seafood sauce or Worcester sauce. It’s really easy.

You can buy most of the ingredients from Amazon.com below this post. For glass noodle I usually use Kaset Brand and I'm glad that amazon has it. About sauces, Oyster and soy sauce, I prefer Healthy Boy Brand and Maekrua Brand. You can either used light soy sauce or soy sauce with mushroom.

Fried squid with garlic and peppercorns

I seldom have squid as a dish because my home town is far from the sea. However this is fried seafood recipe, an easy spicy meal that is excellent to be eating with rice. In this recipe you can see that we use sugar. Most of the time adding sugar during the cooking is not purposed for the sweet flavor of sugar but to smooth the flavor of the food.

2-3 Squid
5 cloves Crushed garlic           
4 tbs. Oil                            
2-3 Crushed peppercorn
2 tbs. Oyster sauce 
½ ts. Sugar  
½ cup Sweet basil leaves      
Peppercorn for topping

Cut the squid into rectangular shape or ring shape. Crush 3 of garlic cloves , marinate with the squid and 1 tbs. of oil for 30 minutes. Pour the oil into the wok or pan then fry the garlic that left for 10-20 seconds. Put the squid into the pan and fried for 1 minute then add crushed peppercorn and fried for 2 minutes. Add the oyster sauce and sugar then fried until the squid is cooked. Topping with sweet basil leaves and peppercorn.
