Fried squid with garlic and peppercorns

I seldom have squid as a dish because my home town is far from the sea. However this is fried seafood recipe, an easy spicy meal that is excellent to be eating with rice. In this recipe you can see that we use sugar. Most of the time adding sugar during the cooking is not purposed for the sweet flavor of sugar but to smooth the flavor of the food.

2-3 Squid
5 cloves Crushed garlic           
4 tbs. Oil                            
2-3 Crushed peppercorn
2 tbs. Oyster sauce 
½ ts. Sugar  
½ cup Sweet basil leaves      
Peppercorn for topping

Cut the squid into rectangular shape or ring shape. Crush 3 of garlic cloves , marinate with the squid and 1 tbs. of oil for 30 minutes. Pour the oil into the wok or pan then fry the garlic that left for 10-20 seconds. Put the squid into the pan and fried for 1 minute then add crushed peppercorn and fried for 2 minutes. Add the oyster sauce and sugar then fried until the squid is cooked. Topping with sweet basil leaves and peppercorn.
