Banana recipe dessert –Banana in coconut milk

This banana recipe dessert is so easy to cook as usual. If you are a banana lover, I’m sure you would love Thailand cause we have plenty types of banana. This dessert is a really common Thai dessert that you can easily find banana in coconut milk in many Thai ceremonies.

8 Bananas
3 cups Coconut milk
1/3 cup Sugar
½ ts. Salt 
  1. Boil the bananas without peeling for 3-5 minutes. Take them out.
  2. Boil coconut milk with sugar and salt. Stir regularly until the coconut milk is hot.
  3. Peel the bananas. Sliced into 4 pieces per banana. Add them into boiling coconut milk.
  4. Boil the banana in coconut milk for another 1 minute and take it out. Wait until it’s cold down. Serve.

Recipe for fresh corn –Sweet corn with sugar and coconut


This recipe for fresh corn is a snack for many Thais. You can see this snack (in Thai, Kaaw-Poad-Kluong) selling from many vendors in Thailand. It’s really easy and also cheap.

1-2 cups Fresh corn, boiled and sliced
1 tbs. Sugar
1/8 ts. Salt
Coconut, grated with coconut grater 
  1. Lay grated coconut in a plate. Add sugar and salt
  2. Add sweet corn and stir until all the ingredients mixed together. Served.
Really easy, right? Many Thais, esp. those who still young, love this dish because it’s easy to cook. You can have this dish as a dessert after you main dish.

Light dessert for summer-Melon in sweetened coconut milk

Summer!  As you all known, Thailand is really hot during this time of the year. Light dessert for summer like melon in sweeten coconut milk or Taeng-Thai-Naam-Ka-ti is a good dessert for this hot climate. It is easy to cook and use only a few of ingredients. Authentic  Thai cuisine use muskmelon as a main ingredient, but you can use melon to cook this delicious light dessert.

1 Melon, sliced and cut into cubes or scooped
2 cups Coconut milk
1/3 cup Palm sugar
1/2 ts. Salt
  1. Boil coconut milk with palm sugar and salt until diluted.
  2. Put the melon into a small bowl. Pour the sweetened coconut milk into a bowl. Serve.
You can add some ice in the dessert, but you should also add more palm sugar in the recipe because the ice will dilute the sweet taste of sweetened coconut milk. For a party with lot of guests, you should served two bowls, one with the sweetened coconut milk and one with the melon and let your guests prepare the dessert themselves.

How to make Thai dessert with microwave-Custard in pumpkin


Microwave oven is an easy and quick cooking equipment that allow you to cook many dishes. This custard in pumpkin or Sangkaya is one of the example.

1 Pumpkin medium size
½ cup Palm sugar
3 Eggs
¼ cup Coconut milk
2 Pandan leaves (Optional)
  1. Open the top of the pumpkin and take all the seed out. Clean inside the pumpkin with water.
  2. Break the eggs. Mix eggs with pandan leaves and palm sugar. Stir until the sugar diluted. Add coconut milk. Stir until all the ingredients thoroughly mixed.
  3. Pour the mixture into the pumpkin about ¾
  4. Put the pumpkin into microwave oven. Used high temperature about 7 minutes to cook.
  5. Wait until cold. Sliced and serve.

Simple dessert idea- Chinese Water chestnut in coconut cream

Chinese Water chestnut in coconut cream or Tub Tim Krob is a simple dessert idea. Easy to cook. A good dessert after a hot and spicy Thai meals.

1 cup Chinese water chestnut, cube cut
1/2 cup Tapioca starch
3/4 cup Coconut milk
150 g. Sugar
3/4 cup Water
Ice, Coloring
  1. Dilute pink coloring with water. Add chinese water chestnut and stir. Wait for 10 minutes.
  2. Put the colored water chestnut into tapioca starch and stir.
  3. Boil 2 cups of water. Put the chinese water chestnut and boil until 3/4 cooked. Take them out.
  4. Boil sugar with water to make syrup. Stir for 2-3 munutes. Add coconut milk.
  5. To serve-put the water chestnut into a bowl. Add the syrup and ice.
You can top this dessert with some sliced fresh coconut or jackfruit. The trick of this cooking is that you should not cook the 3rd step untill the tapioca starch is all crytal. That will be over cooked and the tapioca starch will be too soft and fall out. Just boil the water chestnut and see if the tapioca starch is partly crytal.

Thai dehydrated fruit recipe-dried candied mango

Dried candied mango is a common dehydrated fruit recipe for Thais. If you are a fruit lover, Thailand should be your paradise. We have so many types of tropical fruit- banana, mangosteen, rambutan, durian- you name it! Their price also so cheap compare to prices in the western or in some countries. I heard that other countries sell mango by unit, right? In Thailand, most of fruits usually sell by weight! Mango is another local fruit.  Sometime in the plentiful seasons there left some surplus, so Thai preserve them by making dried candies mango. It is easy to make but take a lot of energy. If you wan to try, here is the recipe.

6 and 1/2 cups Mango, thoroughly chopped 
1 ts. Salt
  1. Mix mango and salt in a wok and stir with medium heat for about 1 hrs. Take it out and leave the mixture for cooling down. 
  2. Spread plastic wrap on the table. Put the mixture for 1 and 1/2 tbs. each and use the back of the spoon to spread it over the plastic wrap.
  3. Dry in the sun for 5-6 hours
  4. Turn the upside down and continue dry them for another 2-3 hours. 
  5. Keep the dried candied mango in a jar.
You can also add some Thai paprika to make them more tasty and eat them as a snack.

Although I know that mango is hard for many of you to find (plus the price is so high), I post this dehydrated fruit recipe because I think you can adapt your local fruit with this recipe. I would love to try strawberry (or other berries) with this preserving food technic.
