Sliced cucumber recipe :Spicy Thai cucumber salad

This sliced cucumber recipe I posted is an authentic Thai food recipe. In the past, long-long time ago, Thai cuisine hadn’t got much cooking technics or kitchenwares except a terracotta pot, so the technics applied during that time were boilng, dipping, frying, or salad like this recipe.

4 cups Cucumber, scooped and thinly sliced or chopped
½ cup Shallots, sliced
½ cup Dried shrimp, blended
4 Bird’s eye chilli, sliced
1 tbs. Fish sauce
1 tbs. Palm sugar
4 tbs. Lime juice
½ tbs. Shrimp paste (Optional) 
  1. Make the dressing by mixing palm sugar, fish sauce, lime juice (and shrimp paste if you’d like). Stir.
  2. Put the sliced cucumber in a bowl or a plate. Add blended dried shrimp and sliced shallot.
  3. Put the dressing in 1. into the bowl and stir. Serve.

Easy egg salad: Spicy fried egg salad

This easy egg salad is quite common for many beginner Thai cooks. Like most Thai salad, its spicy taste is perfect to eat with alcohol beverage. You can also eat this dish with rice as a dinner.

2 Eggs
1 Onion, sliced
1 Tomatoes, sliced
1 Celery, sliced
7 Bird’s eye chili, chopped
1 tbs. Fish sauce
2 ts. Sugar 
  1. Fried the eggs until cooked. Take them out. You can also cut them into pieces for convenience.
  2. Mix the dressing by adding lime juice, fish sauce, chopped bird’s eye chili and sugar. Stir until the sugar is diluted.
  3. Top the fried eggs with sliced onion, sliced tomatoes and sliced celery. Add the dressing. Serve.
Oh, I almost forgot to tell. You'd better eat this dish (and most of Thai salad) as soon as they finished because if you leave them for such a long time, the juice in the vegetables (onions, tomatoes, etc.) will come out and mix with the dressing, hence lower the tastes of the dishes.

Easy and quick to cook. This recipe for Asian salad is best to be a dish eating with alcohol drink or an afternoon snack. You can also make this dish and eat with jasmine rice. The main ingredient –bacon-is a common one in western kitchen.

1 cup Bacon
3 Shallot, sliced
½ cup Mint leaves
1 Lettuce or cos
9 Bird eye’s chilli, sliced
2 ½ tbs. Fish sauce
2 ts. Sugar

  1. Put the bacon on a plate and cook with microwave on high temperature for 5 minutes.
  2. Mix the dressing by adding sugar, fish sauce, chilli, and lime juice. Stir until the sugar is diluted.
  3. Slice the cooked bacon or just break them with your hands. Put the bacon in a mix bowl. Add shallot, mint leaves, lettuce, and dressing. Arrange on the plate. Serve.

Thai pineapple and shrimp fried rice recipe, easy dish for you!

Thai pineapple and shrimp fried rice recipe is easy to cook. It’s not spicy so kids usually love this dish. If anyone ask how to make stir fried rice, I would say always remember to use old rice as an ingredient because the old rice is less moisture and less sticky. Also use medium temp during the cooking.

½ cup Shrimps
½ cup Ham, sliced
½ cup Pineapple, sliced
2 cups Rice
1 ts. Garlic, chopped
½ cup Carrot, chopped into small cube
½ cup Onion, chopped into small cube
1 ts. Salt
1 tbs. Sugar
1 ts. Ground pepper
2 tbs. Soy sauce 
  1. Pour the oil into a wok and heat with medium temperature. Fried garlic for 10-20 sec. Add shrimps and fried until 80 percent cooked.
  2. Add carrot, onion, ham and rice. And, finally, pineapple.
  3. Flavor with sugar, salt, soy sauce and pepper. Fried until cooked.
  4. Serve with fish sauce andchilli. Side dish with sliced fresh cucumber. You can top the dish with roasted cashew nuts and chopped spring onion if you'd like.

6 Hard boiled eggs, peeled and sliced
10 Bird’s eye chilli, sliced
10 clovers Garlic, sliced
10 cups Shallot, sliced
¼ cup Fish sauce
2 Corianders 
½ cup Dried shrimp, blended (Optional)
  1. Lay the sliced boiled eggs on a plate.
  2. Mix the dressing with fish sauce and lime juice. You can also add a pinch of sugar if you want.
  3. Top the boiled eggs with bird's eye chilli, garlic, shallot, and blended dried shrimp.
  4. Add the dressing in 2. Top with coriander. Serve.

Chinese cabbage stir fry recipe

This Chinese cabbage stir fry recipe (Paad-Pak-Kaad-Kaw) is not an authentic Thai food. Actually it’s Chinese, but, like many Chinese dishes, Thai cuisine embraced and adopted these dishes so they become common dish in Thai homemade meals.

½ cup Pork, sliced
1 Chinese cabbage, sliced
½ ts. Palm sugar
½ tbs. Garlic, crushed and thoroughly chopped
2 tbs. Cooking oil
2-3 tbs. Fish sauce or soy sauce 
  1. Heat the wok. Add cooking oil and garlic. Fried for 10-20 seconds.
  2. Add sliced pork and fish sauce or soy sauce. Fried until 95 percent cooked.
  3. Add slice Chinese cabbage and palm sugar. Continue frying for 20-30 seconds. 
  4. Serve with rice. 
This dish has a lot of Chinese cabbage as a main ingredient and this vegetable is luscious. It has a lot of internal water which will be mix with the flavoring ingredients during the frying and soften the taste of the dish. Hence you should not spend a lot of time on stage 3.

Recipe for Thai cucumber soup

This recipe for Thai cucumber soup is a good dish to eat with rice and fish sauce. It’s easy to cook and also and healthy.

 1-2 Cucumber, peel and scooped
1 cup Ground pork
2-2 ½ cups Stock
1 ts. Powdered pepper
2 tbs. Soy sauce
1 ts. Oyster sauce
1 ts. Ground coriander root (Optional)
1 Garlic, crushed and thoroughly chopped
¼ ts. Salt 
  1. Mix the powdered pepper, ground coriander root, and thoroughly chopped garlic.
  2. Marinate ground pork with the ingredient in 1., soy sauce, and oyster sauce for at least 10 minutes.
  3. Stuff the scooped cucumber with ground pork.
  4. Boil the stock, add salt and wait until hot.  Put the stuff cucumber in a boiling stock and cook for 15-20 minute. Serve.
You can add glass noodle in the ground pork. Also you can top the dish with chopped spring onion. Since The taste of this dish is mild, so you can eat it alone or with rice. You can also flavor the dish in your plate with fishsauce and chilli

8 Bananas
3 cups Coconut milk
1/3 cup Sugar
½ ts. Salt 
  1. Boil the bananas without peeling for 3-5 minutes. Take them out.
  2. Boil coconut milk with sugar and salt. Stir regularly until the coconut milk is hot.
  3. Peel the bananas. Sliced into 4 pieces per banana. Add them into boiling coconut milk.
  4. Boil the banana in coconut milk for another 1 minute and take it out. Wait until it’s cold down. Serve.

Really easy, right? Many Thais, esp. those who still young, love this dish because it’s easy to cook. You can have this dish as a dessert after you main dish.

Easy Thai noodle recipe –Rice vermicelli with pineapple and coconut milk sauce


This easy Thai noodle recipe is an authentic Thai dish. It’s a good dish for summer. You can see from the name of the dish - Rice vermicelli with pineapple and coconut milk sauce  (Kaa-nom-jin-saw-naam)-that it also uses rice vermicelli. Thais eat rice vermicelli regularly. It’s also easy to cook. The traditional recipe use fish meat to make what we call “Jang-lon which is a kind of fish ball, but you can use an industrial fish ball for your convenience.

200-300 g. Rice Vermicelli
2-3 cups Pineapple, thoroughly chopped
¼ cup Ginger, thin sliced
2 cup Dried shrimp, thoroughly crushed
1 cup Sugar
5 tbs.Lemon or lime juice
2 Boiled egg
¼ cup Garlic, sliced

Coconut milk sauce
1 cup Fish ball
1 ½ cup Coconut milk
  • Mixed the ingredients for sauce

 Boiled egg
  • Boil the water until hot. Put the eggs and boil approximately 6 minutes. Take them out and put in cold water for easy peeling.

  1. Steamed rice vermicelli and arrange in the plate
  2. Top with chopped pineapple, crushed dried shrimp, sliced garlic, sliced ginger, and boiled egg.
  3. Add sugar,  fish sauce with chilli, and lime juice
  4. Top with coconut milk sauce. Serve.

Healthy snack recipe –Fried tofu


This healthy snack recipe is another common street food in Thailand. You can find a vendor selling fried tofu or Tao-Huu-Todd in almost every local markets. It’s easy to cook and good for your health, also a vegetarian snack.

1-2 Tofu (Hard tofu), cut into pieces

Dipping

½ cup Vinegar
2 ts. Salt
½ cup Sugar
1 ts. Tapioca or corn starch
¼ cup Peanut, roasted and crushed
1 tbs. Chilli, crushed
Coriander, roughly chopped 
  1. Fried tofu (Deep fried). Take out and put them in a plate.
  2. For the dipping, mix vinegar with salt and sugar. Boil and stir until the sugar is diluted. Add tapioca starch and stir. Add crushed chilli.
  3. Add crushed peanut and chopped coriander. Serve with fried tofu.

This recipe for rice noodle is another dish Thai adopted from Chinese cuisine. Fried rice noodle with pork in thick gravy or Laad-Naah in a common that you can find in many street food shops or in Thai restaurants. Here’s the recipe for you to cook.

2 tbs. oil
½ cup Wide rice noodle
1 ts. Sweet soy sauce
¼ cup Pork, sliced
1 Chinese broccoli, sliced
2 cup Stock
2 ts. Soya bean
2 ts. Soy sauce
½ ts. Seasoning sauce
1 ts. Sugar
1 tbs. Tapioca or corn starch
  1. Heat the wok with medium temperature until hot. Add 1 tbs. oil and fried wide rice noodle. Add sweet soy sauce. Fried until the noodle is a little bit brown. Take it out and put the noodles in a plate.
  2. Making thick gravy by heating the wok with medium temperature. Add 1 tbs. oil.
  3. Add sliced pork and stir until 80% cooked.
  4.  Add sliced Chinese broccoli, stock, soya bean, soy sauce, seasoning sauce and sugar. Stir.
  5. Add 3 tbs. tapioca starch diluted with water. Stir until cooked.
  6. Top the thick gravy on the fried rice noodles. Serve.

You can flavor this dish on your own plate with power pepper, fish sauce, vinegar, sugar, and Thai paprika.

Light dessert for summer-Melon in sweetened coconut milk

Summer!  As you all known, Thailand is really hot during this time of the year. Light dessert for summer like melon in sweeten coconut milk or Taeng-Thai-Naam-Ka-ti is a good dessert for this hot climate. It is easy to cook and use only a few of ingredients. Authentic  Thai cuisine use muskmelon as a main ingredient, but you can use melon to cook this delicious light dessert.

1 Melon, sliced and cut into cubes or scooped
2 cups Coconut milk
1/3 cup Palm sugar
1/2 ts. Salt
  1. Boil coconut milk with palm sugar and salt until diluted.
  2. Put the melon into a small bowl. Pour the sweetened coconut milk into a bowl. Serve.
You can add some ice in the dessert, but you should also add more palm sugar in the recipe because the ice will dilute the sweet taste of sweetened coconut milk. For a party with lot of guests, you should served two bowls, one with the sweetened coconut milk and one with the melon and let your guests prepare the dessert themselves.

Vegetarian mushroom recipe-Tofu and shiitake in soy sauce stew

This vegetarian mushroom recipe use dried shiitake mushrooms as a main ingredient. It’s not an authentic Thai food, but a Chinese one. However, in the northern part of Thailand, for example Chiang Rai, there are a lot of people whose have Chinese ancestors lived in Yunnan area of China. This dish is a stream of culture in cuisine. You can add firm tofu (sliced into square shape) in the recipe if you like.

1 box Hard tofu, sliced (Optional)
12 Dried shiitake
3 tbs. Soy sauce
1 tbs. Seasoning sauce
½ ts. Powdered pepper
1 ts. Sweet soy sauce
3 cups.Stock.
A pinch of palm sugar or sugar. 
  1. Clean dried shiitake and soak in the water until soften.
  2. Boil the stock until hot. Add sliced hard tofu, shiitake. Flavor with all the sauces.
  3. Lower the temperature and cook until the stock is about ¼ 
  4. Served.

Healthy dip for vegetables- Soya bean dipping sauce

If you love vegetable, you will surely love authentic Thai food.  In the old day, most Thai have a meal with at least one curry paste or dipping as a main dish, and we eat them with lots of vegetable as side dish. The side dish and the rice would soften the spicy of curry pastes. This soya bean dipping or “Loan-Taaw-Jeaw” is not so spicy, even a child can easily eat it, but also has lots of vegetable as side dish like most curry pastes or Thai dippings do.

½ cup Soya bean
3 tbs. Ground prawn
3 tbs. Ground pork
1 ½ cups Coconut milk
4 Shallots, sliced
3-5 Goat chili
3 tbs. Sugar
3 tbs. Tamarind paste
½ ts. Salt
  1. Boil coconut milk until the some coconut oil is on the top
  2. Sieve soya bean and blend with 2 shallots. Put them in the coconut milk
  3. Add ground prawn, ground pork and goat chili. Use low temperature and boil until cooked.
  4. Flavor with sugar and tamarind paste.
  5. Serve with fresh vegetables ie. cucumber, coriander, long bean sprout as side dishes.

Recipe for Thai fried rice-Chinese sausage fried rice

This recipe for Thai fried rice is easy to cook as most fried rice do. The main ingredient for Chinese sausage fried rice or Kaw-Paad-Koon-Chiang is Chinese sausage which you can buy from any Chinese store and the rice. For the rice, remember that to cook any fried rice you should use “old rice” because it has fewer moisture than the new one, hence it is less sticky. In case you don’t have old rice, just put the cooked rice into the refrigerator and wait until the rice is less sticky.

1 tbs. Chinese sausage, sliced into a small cube.
1 Egg
2 Spring onion, sliced
1 Chinese broccoli, sliced
½ Onion, sliced

1 ts. Sugar
1 tbs. Fish sauce
1 tbs. Oyster sauce
2 cups Rice, cooked

  1. Fried the chopped garlic for just 10-15 sec. Add cubed Chinese sausage and continue frying.
  2. Add onion, Chinese broccoli, tomato.
  3. Flavor with fish sauce, sugar and oyster sauce.
  4. Add cooked rice, stir and fried until all the ingredients thoroughly mixed.
  5. Top with sliced spring onion. Served.
This recipe for Thai fried rice is best served with sliced fresh cucumber as side dish. Oh, and don’t forget the fish sauce with bird's eye chili!

Another thing to remind you, all of the fried rice recipes should slice or chop all the ingredients into small pieces. When you have a spoon of fried rice, most of the ingredient should be in that spoon.

Thai calamari salad or Yum-Pla-Mueak is really easy to cook. Thais usually eat this dish as a food with alcohol drinks. You can cook this dish as a meal eating with rice.

1 Squid (about 300-400 g.), sliced
3 Shallot, sliced
¼ cup Onion, sliced
¼ cup Celery, sliced
1 tbs. Bird eye’s chilli, thoroughly chopped
1 ½ Sriracha sauce
3 ½ tbs. Lime juice or lemon juice.
1 tbs. Fish sauce
1 ts. Sugar

  1. Boil the sliced squid about 1 minute. Take out.
  2. Mix sugar, Sriracha sauce, lime juice, fish sauce. Stir until sugar diluted. Add bird eye’s chilli.
  3. Mix the dressing with squid. Add celery, shallot and onion. Stir.
  4. Serve.

This recipe for Thai fried rice is not an authentic Thai dish. As you all known, fried rice and fry cooking technic is what we derived from Chinese. However, Thais adopt and adjust this technic in many recipes. This egg fried rice or Khao-Paad-Khai is one of them. It’s a common street food in Thailand.

3 tbs. Onion, sliced

1 tbs. Fish sauce
1 ts. Sugar
2 tbs. Spring onion, sliced 
  1. Heat the wok and fried the garlic for about 10 second.
  2. Fried the sliced pork until cooked.
  3. Break the eggs and fried until cooked. Add tomatoes, onion and Chinese broccoli.
  4. Add the cooked rice. Stir. Flavor with fish sauce and sugar.
  5. Top with sliced spring onion. Serve.
You can have sliced cucumber as side dish. Oh! And don’t forget fish sauce and bird’s eye chili. Enjoy your meal!

Microwave oven is an easy and quick cooking equipment that allow you to cook many dishes. This custard in pumpkin or Sangkaya is one of the example.

1 Pumpkin medium size
½ cup Palm sugar
3 Eggs
¼ cup Coconut milk
2 Pandan leaves (Optional)
  1. Open the top of the pumpkin and take all the seed out. Clean inside the pumpkin with water.
  2. Break the eggs. Mix eggs with pandan leaves and palm sugar. Stir until the sugar diluted. Add coconut milk. Stir until all the ingredients thoroughly mixed.
  3. Pour the mixture into the pumpkin about ¾
  4. Put the pumpkin into microwave oven. Used high temperature about 7 minutes to cook.
  5. Wait until cold. Sliced and serve.

This easy rice noodle recipe is really easy and quick to prepare. Spicy rice noodle salad or Kaew-Tew-Bok is not a common dish you would find in any food shops, however it’s gradually wide spread among Thais during the past 10 years due to its easy to prepare and tasty. A good dish for those who love spicy and vegetable.

2/3 cup Wide rice noodle, steamed until cooked
1/2 cup Ground pork or sliced pork, boiled
1/4 cup Dried shrimp or shrimp, boiled
1/2 cup Bean sprout
1/2 cup Peanut, roasted
1/2 cup Cucumber, sliced
1/2 cup Mint leaves
3-4 Lettuce
1/2 cup Carrot, sliced (Optional)
1/2 cup Sweet basil leaves (optional)

Dressing
10 Bird’s eye chili, thoroughly chopped
2 tbs. Lime juice or lemon juice
½ ts. Salt
2 tbs. Garlic, crushed and thoroughly chopped
2 tbs. Fish sauce 
  1. Mix all the dressing ingredients. Taste for your favorite flavor.
  2. Put some lettuce on a plate. Mix all the ingredients include the dressing on a plate. Served
Really easy.  :) If you cannot find wide rice noodle, you can use any type of rice noodle or even pasta instead. If you have time, you can also wrap the ingredients by using wide rice noodle to make this dish a finger food or starter.  Enjoy!

1 Onion, sliced
1 Tomato, sliced
2 Spring onion, sliced
2 Celery, sliced
2-3 Lettuce leaves
½ tbs. Fish sauce
2 tbs. Lime juice or lemon juice
¼ ts. Sugar
15 Bird eye chilli, chopped 
  1. Mix the dressing by adding fish sauce with lime juice, sugar. Stir until sugar is diluted. Add chopped chilli.
  2. Mix dressing with sliced cocktail sausage, onion, spring onion, and tomato.  Stir until all the ingredients thoroughly mixed.
  3. Lay 2-3 lettuce leaves on a plate and topped with Spicy sausage salad. Top again with sliced celery. Serve.
Easy and quick, right? This Thai sausage recipe can also used as a starter for a party. The ingredients are easy to find in any oriental grocery store, so why don’t you cook this dish for this weekend?

This Thai recipe with bell peppers is another easy one to cook for a quick lunch.

3 tbs. Oil
1 tbs. Garlic, thoroughly chopped
1 cup Pork, sliced
1 Onion, sliced
½ cup Green or red bell pepper.
2 tbs. Water
½ tbs. Seasoning sauce
1 ts. Soy sauce
1 tbs. Sugar
  1. Fry pork with garlic. Add sliced onion and sliced bell pepper.
  2. Add water.
  3. Flavor with Seasoning sauce, soy sauce and sugar. Stir until cooked.
  4. Top on rice. Serve.
This Thai recipe for bell peppers is not so spicy, hence a good dish for kids or anybody who dislike the spicy taste. You can enjoy this dish with some soup, like the ivy gourd soup.

2 tbs. Fish sauce
3 ½ tbs.Lime juice
1 ts. Sugar
2 tbs. Bird eye chili, thoroughly sliced
2 tbs. Garlic, thoroughly sliced
1 ts. Coriander root, thoroughly sliced
2 cups Pork sirloin, sliced
  1. Mix dressing with fish sauce, lime juice, and sugar. Add bird eye chili, garlic, and coriander root.
  2. Boil the water. Dip the sliced pork in the water and wait for about 5 minutes. Take them out.
  3. Top the cooked sirloin pork with the dressing. Stir until all the ingredients mix together. Serve.
This pork sirloin chop recipe is easy to cook. You can also eat this dish with rice if you want but it might not be a good dish for anyone who cannot tolerate the hot and spicy of chili. However, if he/she dare to try, he/she would love it. Enjoy! :)

Easy vegetable stir fried recipe - stir fried bean sprout with tofu

Stir fried bean sprout with tofu or Pad-Tau-Ngog is a really easy dish that is not spicy. Also a dish for any of you who are vegetarians.

2 cups Bean sprout
1 cup Hard tofu for stir fry, sliced
1 ts. Garlic, thoroughly chopped
2 Spring onion, chopped
¼ cup Goat chili, sliced
1 tbs. Soy sauce
½ ts. Pepper, ground
  1. Fry sliced hard tofu until the outside turn yellow. Put them on the plate.
  2. Mixed bean sprout with all seasoning. (Soy sauce, ground pepper, sliced goat chili, chopped spring onion)
  3. Quickly stir fry bean sprout with tofu. Serve.
Eat with hot jasmine rice. Ummm...Yummy!
