Thai chicken satay recipe

Here is the Thai chicken satay recipe, another famous Thai dish. Satay is the technic Thai cuisine adopted from Islamic culture. You can use chicken, meat,pork, or shrimp. Satay BBQ in the backyard with you family would be a lovely night to remember. This Thai chicken satay recipe I post is an authentic one which needs some ingredients that might be a little hard to find but it is really delicious!

Thai chicken satay
500 g. Chicken, sliced
3 tbs. Coconut milk
1 ts. Coriander seed
1 ts. Cumin
1 tbs. Butter
2 tbs. Condensed milk
¼ ts. Tumeric powder
1 tbs. Lemongrass
1 tbs. Galangal
¼ ts. Kaffir skin
¼ ts. Salt

  1. Mix all the ingredients except the chicken and blend.
  2. Marinade chicken with the blended ingredient for at least 1 hr.
  3. Skewer the chicken  and grill with medium temperature. Eat with peanut sauce and cucumbers and onions in vinegar (ajad)  
This satay could be a good starter for any party. I will post about the peanut sauce and ajad in a next few day. Enjoy!

Dehydrated lime juice-OJ lime juice review

OJ lime juice is a dehydrated lime juice made by Thai factory. I’ll be frank to you, if I have option, I prefer the fresh lime to the dehydrated lime juice because the fresh one have a better lime aroma beside the taste. Anyway for those of you who have some difficult finding lime or lemon, this is your solution.

I use OJ sometime in the past when it was hard to find any lime or lemon. OJ is intense and more acidic but less bitter than actual lime. You can use this dehydrated lime juice to make some bakeries, such as pie or cake, beside Thai dishes. Since lots of Thai recipes need lime, you can use this product as a substitute ingredient for fresh lime juice. Just dilute the powder with water as instructed on the package and stir. It is easy and convenient.

OJ can also be used to make drink. I love a cold sour drink especially in the hot day. Just dilute the powder with water, add some sugar or syrup, and, lastly, some ice cubes. What more?

A pack of OJ equal about 6 lime fruits. With the intense of concentration in OJ dehydrated lime juice, you do not need to use to much of it. That means one pack of OJ can be used for period of time, hence you don’t have to buy it so often. Just keep it in the refrigerator and it can stay good for at least a year. (It has on preservative in the ingredients). Another way to save your money, even though the price of OJ is not so expensive compare to the others dehydrated lime juice brands in the market.

Sweet Asian chili sauce for Thai food

An easy sweet Asian chili sauce recipe. Sweet chili sauce is a common Thai dipping for fried or grilled meats (chicken, fish, fried meatball, etc.) The sweet and sour taste will reduce the greasy of the dish. The chili also add your appetize. This sauce is not so hot, just mild spicy.

Homemade sweet and sour sauce
Sweet Asian chili sauce
4 Red goat chili, picked out all the seeds
12 Bird’s eye chili
4 cloves Garlic
½ ts. Salt
½ cup Vinegar
1 ts. Sugar

  1. Blend bird’s eye chili, goat chili, garlic, and salt.
  2. Add vinegar and sugar with the blended ingredients. Stir till all the ingredient thoroughly mixed.
This sauce is sweet and not so spicy. I have heard that some foreingers use this sauce as a dressing for their salad. They stock this instant sweet chili sauce for 4-5 bolttles in their refrigerator! 

There are some instant sweet Asian chili sauce brands selling in the market. The most well known for Thais is "Mae Pranom". However, I have not see this brand selling on the net. You can use "Pantainorasing" brand instead. This is another good brand. Amazon also has it. Another good brand is "Mae Ploy" which has many sizes for you. I will review about all these brands later.

A good chicken marinade for grilling Thai-style grilled chicken

The problem with grilled chicken is how to make a good chicken marinade for grilling. Here is the recipe.

Thai-style grilled chicken
1 Chicken (about 2.5 kg. or 5.5 pounds)
2 Tangerines, cut into a half
2 tbs. Salt
2 tbs. Coriander root, garlic, and pepper, crushed
6 tbs. Soy sauce
¾ cup Beer

  1. Scrub chicken with tangerines to get rid of fishy smell
  2. Scrub chicken with salt
  3. Mixed all the left ingredients to make a good chicken marinade. For grilling, marinade chicken at least 2 hours and grill with low temperature until cooked. You can use a BBQ oven.
This dish is another favorite for many Thais. Thai-style grill chicken can get along very well with sticky rice and Somtam (Papaya salad). You can use sweet and sour sauce or just fish sauce with lime juice and bird's eye chili (or Thai paprika) as dipping. Most street food shop grill chicken until dry, but that’s depend on your preference.

Mae Ploy curry paste-Panang

Mae Ploy curry paste is the brand under the Theppadungporn Group, a manufacturer for many Thai food ingredients. The name of the brand is a leading character in a Thai famous novel. For many Thais, Mae Ploy represented a Thai lady who well trained in both manners and Thai cuisine. Hence Theppadungporn Group use this name as a brand name for Thai chili pastes.

Most Thais usually buy curry pastes from a fresh market or supermarket near their houses. My mom does too. Even we are Thais, it takes time to chopped, sliced, pond etc. all the ingredients to make a curry pastes.Plus, if you are a foreigner, finding all the ingredients to make curry pastes might be a hard work if you have not live near any South East Asian stores. A pre-prepared products like Mae Ploy will be a time saver for you. (and for me!)

Mae Ploy curry paste for Panang also made in Thailand. As you all know, it is best to purchase a product from Thailand for use in Thai dishes. I know that most of the pre-prepared product always taste like they're lacking something, but for Mae Ploy curry pastes, the exact opposite is true. I found that this is the most closest to the authentic Thai Panang curry paste. I have read some review in the Amazon.com said it is too spicy for his/her tongue, but this is the real one! If you find that it is too spicy, just lower down the quantity of curry paste in your ingredient and/or add some more coconut milk. 
     
This brand is all natural. No chemical, preservatives, or artificial ingredients; just real, natural, flavorful ingredients. The Mae Ploy curry paste for Panang also contains shrimp paste while some brand ie, Mae Sri panang curry paste, does not. However this may be a drawback for some of you who are vegetarians. In that case, just used Mae Sri, a second best of curry paste in my point of view.

I use Mae Ploy curry paste for other Thai dishes, not just Panang. For example fried fish with Panang sauce. Just experiment in your regular everyday cooking.  This curry paste can surely added exciting to many dishes.

Even with no preservatives, this pre-prepared pastes seems to last indefinitely. I've kept it in the fridge for months with no molding or spoilage. The curry paste is vacuum-sealed in a plastic bag and placed inside a plastic container with a snap-tight lid. However, this may be a little disadvantage for you since some say that this makes it very difficult to measure the pastes from. The container has direction on the side, really easy to use. Just follow the instructions and you can have a good real Thai Panang for your meal.

Spicy ground chicken with hot basil


Spicy ground chicken with hot basil (holy basil) is one of the most common foods in Thailand along with Thai omelet. It is also my favorite. You can find spicy ground chicken with hot basil or Kai Pad Kapraw in every a la carte shop. It’s spicy, but you can adjust the ingredients to your taste.

7 cloves Garlic
15 Bird’s eye chili
2 tbs. Oil
2 tbs. Soy sauce
1 cup Ground chicken
2 tbs. Oyster sauce
3 tbs. Water
1 ½ ts. Sugar
1 cup Holy basil

  1. Put the garlic and bird’s eye chili in the blender and blend for 1 minute
  2. Heat the oven. Fry the ingredients in 1. with oil (I should warn you-during the frying the aroma of the ingredients is so strong it might make you cry, be patient!) Add ground chicken. Flavor the dish with soy sauce, oyster sauce, and sugar. Add water.
  3. Finally, add holy basil and fry for another 15-30 seconds. Eat this hot basil dish with jasmine rice and fried egg. You can flavor the dish with fish sauce with bird's eye chili (Nam Pla Prig) and have some  fresh cucumbers as side dish. Yummy!
Thai people usually grow some basic ingredients such as chili, lemongrass, pandan, lime, sweet basil, or holy basil in their house. Mine has 2-3 holy basil trees. If you love cooking Thai food, have a space, and the weather is fit to grow these Thai ingredients, you should try. It’s cheaper than buying from a grocery in the long run and also a good hobby.
