Light dessert for summer-Melon in sweetened coconut milk

Summer!  As you all known, Thailand is really hot during this time of the year. Light dessert for summer like melon in sweeten coconut milk or Taeng-Thai-Naam-Ka-ti is a good dessert for this hot climate. It is easy to cook and use only a few of ingredients. Authentic  Thai cuisine use muskmelon as a main ingredient, but you can use melon to cook this delicious light dessert.

1 Melon, sliced and cut into cubes or scooped
2 cups Coconut milk
1/3 cup Palm sugar
1/2 ts. Salt
  1. Boil coconut milk with palm sugar and salt until diluted.
  2. Put the melon into a small bowl. Pour the sweetened coconut milk into a bowl. Serve.
You can add some ice in the dessert, but you should also add more palm sugar in the recipe because the ice will dilute the sweet taste of sweetened coconut milk. For a party with lot of guests, you should served two bowls, one with the sweetened coconut milk and one with the melon and let your guests prepare the dessert themselves.

Vegetarian mushroom recipe-Tofu and shiitake in soy sauce stew

This vegetarian mushroom recipe use dried shiitake mushrooms as a main ingredient. It’s not an authentic Thai food, but a Chinese one. However, in the northern part of Thailand, for example Chiang Rai, there are a lot of people whose have Chinese ancestors lived in Yunnan area of China. This dish is a stream of culture in cuisine. You can add firm tofu (sliced into square shape) in the recipe if you like.

1 box Hard tofu, sliced (Optional)
12 Dried shiitake
3 tbs. Soy sauce
1 tbs. Seasoning sauce
½ ts. Powdered pepper
1 ts. Sweet soy sauce
3 cups.Stock.
A pinch of palm sugar or sugar. 
  1. Clean dried shiitake and soak in the water until soften.
  2. Boil the stock until hot. Add sliced hard tofu, shiitake. Flavor with all the sauces.
  3. Lower the temperature and cook until the stock is about ¼ 
  4. Served.

Healthy dip for vegetables- Soya bean dipping sauce

If you love vegetable, you will surely love authentic Thai food.  In the old day, most Thai have a meal with at least one curry paste or dipping as a main dish, and we eat them with lots of vegetable as side dish. The side dish and the rice would soften the spicy of curry pastes. This soya bean dipping or “Loan-Taaw-Jeaw” is not so spicy, even a child can easily eat it, but also has lots of vegetable as side dish like most curry pastes or Thai dippings do.

½ cup Soya bean
3 tbs. Ground prawn
3 tbs. Ground pork
1 ½ cups Coconut milk
4 Shallots, sliced
3-5 Goat chili
3 tbs. Sugar
3 tbs. Tamarind paste
½ ts. Salt
  1. Boil coconut milk until the some coconut oil is on the top
  2. Sieve soya bean and blend with 2 shallots. Put them in the coconut milk
  3. Add ground prawn, ground pork and goat chili. Use low temperature and boil until cooked.
  4. Flavor with sugar and tamarind paste.
  5. Serve with fresh vegetables ie. cucumber, coriander, long bean sprout as side dishes.

Recipe for Thai fried rice-Chinese sausage fried rice

This recipe for Thai fried rice is easy to cook as most fried rice do. The main ingredient for Chinese sausage fried rice or Kaw-Paad-Koon-Chiang is Chinese sausage which you can buy from any Chinese store and the rice. For the rice, remember that to cook any fried rice you should use “old rice” because it has fewer moisture than the new one, hence it is less sticky. In case you don’t have old rice, just put the cooked rice into the refrigerator and wait until the rice is less sticky.

1 tbs. Chinese sausage, sliced into a small cube.
1 Egg
2 Spring onion, sliced
1 Chinese broccoli, sliced
½ Onion, sliced
1 Tomato, sliced
1 tbs. Garlic, chopped
1 ts. Sugar
1 tbs. Fish sauce
1 tbs. Oyster sauce
2 cups Rice, cooked

  1. Fried the chopped garlic for just 10-15 sec. Add cubed Chinese sausage and continue frying.
  2. Add onion, Chinese broccoli, tomato.
  3. Flavor with fish sauce, sugar and oyster sauce.
  4. Add cooked rice, stir and fried until all the ingredients thoroughly mixed.
  5. Top with sliced spring onion. Served.
This recipe for Thai fried rice is best served with sliced fresh cucumber as side dish. Oh, and don’t forget the fish sauce with bird's eye chili!

Another thing to remind you, all of the fried rice recipes should slice or chop all the ingredients into small pieces. When you have a spoon of fried rice, most of the ingredient should be in that spoon.
